Grilled Red Snapper

1 Scaled/gutted Red Snapper (about 2 lbs.)
1/4 cup olive oil
1 Teaspoon dried Oregano

Very simple and delicious:

Rinse fish and pat dry. Mix olive oil and oregano. Let sit for 10 minutes. Make three or four slices in the side of the fish down to the bone. Rub entire fish with oil mixture. Grill about 5 minutes per side (more or less depending on grill temperature). Serve with fresh steamed vegetables and lemon wedges. Set a place for me when you make this...I'll be right over.
