I have the 190 Bay and think it is a great boat. Unfortunately I'm selling it because I'm moving and the boating outlook is bleak for the next few years (check the classifieds if interested...I'm up in Suffolk, VA).
I can answer some of your questions:
The anchor goes wherever you want to put it. I store it in one of the forward deck boxes and tie it off at either a bow cleat or the bow eye.
I have the standard EZ Loader trailer, which is aluminum and galvanized. Besides a good f/w rinse and keeping the electrical connections clean, I don't do much maintenance on it.
I have the 115 and the regular steering is fine.
The back seat cushion of the front seat comes off, or you can just flip it up. The bottom seat cushion covering the lid of the well does not; it is hinged and flips forward. It is a little cumbersome to leave the back cushion in place, but if you remove it, certainly the bottom seat cushion is not a problem.
