How deep of water? (dumb question right?) reason I ask is I use my Power Pole to stake me off and the Cajun Anchor system I have seen (look in the Flats section) would also work for your shallow water work.

As for my anchor, it sets in my port side front hatch 99.9 % of the time and if needed, I just tie it to a cleat. Now if you have a trolling motor installed and not in 5 foot seas, once could always tie the anchor rode (line) to it as it is laying down in the stowed position, and it should hold to boat with no real issues I would think...
