Question Striper fishing/recipes

hi guys. I'm booking a Striped Bass fishing trip at Lake Jordan here in NC to learn how to catch that species. Are Stripers tasty and if so what recipes could you share? I need to temper my lack of time saltwater fishing with some local monsters.

At the NE TBOT, Outtahere stuffed the bass with some good stuff and spiced it with Old Bay and grilled in foil. At home, I would grill it with a little white wine and less butter...
